This month’s theme for Kulinarya Cooking Club is Arroz Caldo. Arroz Caldo means hot rice and is a comfort food that’s eaten all over the Philippines. It’s a rice dish that is similar to the Chinese congee. It has ginger and in most cases, chicken though other meat can be substituted.
My version is what my mum used to cook for me and my brothers when we were younger. Now I cook it for my children and they love it too. It’s perfect for a mid week meal as my version is quick and easy but most importantly, tasty.
Recipe:
- 1 cup long grain rice
- 1 onion, chopped
- 4 cloves garlic, chopped
- 2cm ginger, cut into thin strips
- 500g chicken wings, separated into wingetttes and drumettes
- 1 litre water
- 2 tsp chicken stock powder
- vegetable oil
- Heat the vegetable oil in a large pot and then add the garlic, onion and ginger.
- Sauté until the onions are just cooked through and fragrant.
- Add the chicken and cook until lightly browned
- Add the rice and mix until the rice is coated in the oil
- Add the water and chicken stock powder.
- Simmer until the chicken is cooked through. About 20-25 minutes

I agree with Tina, Cherrie. Chicken wings are tops in flavour because of the extra skin and bones. Love your arroz caldo! Its best when cooked with love.
Using chicken wings in arroz caldo is a good idea. Not only they are flavorful, they are also very easy to eat.

My boys crave this in cold weather. I usually use the whole chicken when making arroz caldo so we end up fighting over who gets the wings!
